How to make apple crisp with discard

This recipe is really easy and straightforward to make. Below is a brief overview so you know what to expect, but for the entire written recipe including ingredient amounts, please scroll down to the recipe card below.

Step One: Make the apple filling

Wash, peel, core, and chop the apples into bite sized pieces about 1/2″ thick each. Toss the apple chunks in lemon juice (this helps prevent browning). In a small bowl, toss together rest of hte ingredients for the apples and then toss with the apples to coat. Place the apple pieces in the bottom of a buttered 9×13 pan or 12″ cast iron pan.

Step Two: Make the crisp topping

In a medium sized mixing bowl, mix the melted and slightly cooled butter with the discard and mix to help combine. Mix with the remaining ingredients until well mixed. Sprinkle on top of the prepared apples.

Step Three: Assemble and bake

Bake in a preheated oven until the top is golden and crisp, about 30 minutes. Allow to cool 10 minutes before enjoying.

Storage information

Apple crisp is best when it is fresh from the oven, but it will keep, too. Any leftovers can be stored in an airtight container in the fridge for up to 4 days. Microwave leftovers until warmed through. The crisp topping won’t be as crisp as before, but it will still definitely taste good.

Ingredients
  

  • 8-10 medium sized apples
  • 2 Tablespoons lemon juice
  • 1/4 cup brown sugar
  • 2 1/2 Tablespoons cornstarch
  • 1 1/2 teaspoons apple pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
Discard Crisp Topping
  • 1/2 cup sourdough starter discard
  • 8 Tablespoons unsalted butter melted and cooled slightly
  • 1 1/2 cups old fashioned oats
  • 1/2 cup brown sugar
  • 1/2 cup all purpose flour
  • 2 teaspoons apple pie spice

Method
 

  1. Preheat oven to 350 and butter a 9×13″ pan or a 12″ cast iron skillet.
