Method
- Preheat oven to 350 and butter a 9x13" pan or a 12" cast iron skillet.
- Wash, peel, core, and chop the apples into bite sized pieces about 1/2" thick each.
- Toss the apple chunks in lemon juice (this helps prevent browning).
- In a small bowl, toss together the brown sugar, cornstarch, apple pie spice, vanilla, and salt and then toss with the apples to coat.
- Place the apple pieces in the bottom of a buttered 9x13 pan or 12" cast iron pan.
- In a medium sized mixing bowl, mix the melted and slightly cooled butter with the discard and mix to help combine.
- Mix in the oats, brown sugar, flour, and apple pie spice until well mixed.
- Sprinkle on top of the prepared apples.
- Bake in a preheated oven until the top is golden and crisp, about 30 minutes.
- Allow to cool 10 minutes before enjoying. Serve with vanilla ice cream if desired.
